Organic Girl Style: Cilantro Lime Agave Homemade Salad Dressing

Cilantro Lime Agave Dressing GiftOrganic Girl is a salad greens company that makes the most delicious salad dressings I have ever had in my whole entire life.  Yes – they’re THAT good.   The only problem is, when I went to the one and only store in my area that seems to carry this brand, a smallish 8 ounce bottle was priced at an astounding $8 US Dollars.

I gazed upon my favorite flavor with yearning in my heart and on my tongue.  There it stood – the tangy, tasty, and subtly sweet deliciousness that is Lemon Agave.  Oh-so-tempting as I salivated on the memory of its taste – though not  tempting enough to put it in my basket and exchange it for 800 pence of hard-earned cash.  

What sealed the deal and helped me walk away was a quick look at the ingredients list on the back – mostly lemons, and a dash of this and that.  The recipe looked pretty simple, which is probably why it tastes so good.  As with most things lately, I thought – I can make that!

When I got home, I realized I had a ton of limes in the fridge, and a nice bunch of cilantro that needed to be used.  Saving my few lemons for later, I adapted the ingredients to create a beautiful and just as delicious dressing at home with what I had on hand: Cilantro Lime Agave.

Not usually a holiday flavor, I thought, in the midst of December… and since I’m new at this blog thing, seems like a good idea to be timely and all that.  But then it struck me – the gorgeous bright green of this dressing would make a super cute, festive holiday gift with a simple pretty red bow.  And there you have it!  Holiday cheer… and a healthy departure from the usual sugary fare to encourage balanced eating in this season of indulgence.

Unbelievably yummy, festive, raw and vegan – and only took about 5 minutes to make, including peeling the limes, with ingredients I pulled right out of the fridge.  I estimate the actual cost at about $2.00 – a 75% savings from the store-bought dressing!  Now that’s delicious.

Cilantro Lime Agave Homemade Salad Dressing

4 Limes, peeled

6-8 Cilantro stems, rinsed, leaves only

1 Tbsp Ginger Garlic Paste (available at Indian grocery markets) – OR – 1/2 Tbsp minced Ginger + 1/2 Tbsp minced Ginger

1 Tbsp Agave nectarCilantro Lime Agave Dressing Lime and Cilantro

2 Tbsp Olive oil

2 Tbsp Apple Cider vinegar

Dash pepper

Dash or two salt, to taste

{optional: add water by single Tablespoons to adjust consistency or intensity of flavor as desired}

  1. Peel the limes and place into a food processor or blender. Add the cilantro leaves and pulse/blend until pureed.  Remove any large pieces of lime pith remaining.
  2. Add garlic ginger paste, agave, oil, vinegar, salt and pepper.  Blend until evenly distributed, about 10 seconds.

Cilantro Lime Agave Dressing PureeAnd that’s it.  Voila!  You now have a super tasty, tangy, homemade gourmet salad dressing all your own.  I like the full-flavor intensity and a chunky citrus bite, so I didn’t add water to mine.  If you need yours a bit less robust, just blend in a few tablespoons of water until it’s right for you.  I love this over a nice spring greens or spinach salad with freshly sliced cucumbers, cherry tomatoes, and anything else that strikes my fancy at the moment.
